Scorzonera Plant

Also known as “Black Salsify,” this old world perennial root crop is cooked for food across Europe. Delicious light flavor, this plant also produces yellow edible flowers. The root is considered to be effective against snake bites (and the bubonic plague!), but mostly it is eaten in combination with other root vegetables. The black skin is peeled first.
