Rhubarb Plant

The Garden plant we know as rhubarb is actually a hybrid of several species from Asia, where the root has been used for over a thousand years as digestive remedy. This long-lived plant is one of the best known perennial vegetables in the world. Here in the U.S. we like it in sweet dishes like pies and crumbles but in other parts of the world the sprightly acidic flavor is used for cooking meat and savory dishes of all kinds.
