This is an important native American food that has gone functionally extinct throughout most of its range as wetlands have been drained to make way for crops like wheat and corn. It is a starchy root like potato that grows in wetlands. Another name for this plant is arrowhead as the leaves make the shape of an arrowhead. It was traditionally boiled and peeled before being consumed. This one is very productive in our region and produces beautiful white flowers in midsummer.
